Guest Chef Series continues at Patina 250, highlighting local chefs

Patina 250, Patina Restaurant Group’s streetside restaurant located at Delaware North’s corporate headquarters in Buffalo, N.Y., continued its tradition of inviting local chefs into the kitchen with Executive Chef Evan Wargo to create one-of-a-kind culinary experiences. 

Throughout 2024, Patina 250 welcomed chefs in partnership with Curate Hospitality, a local business that connects chefs and guests with tailored hospitality experiences. The collaborations not only give local chefs a stage to bring their creations to life but challenges Delaware North’s culinary team to think outside the box. 

The “Pastry Reimagined” event in March featured Guest Chef Jenn Batt, owner of Quokka Sweets; Seafood & Spritz highlighted Fresh Catch, a local seafood restaurant; Smoke Show in August was a collaboration between Wargo and 2024 James Beard Emerging Chef Finalist Ryan Fernandez, an acclaimed pitmaster and owner of Southern Junction; and Haudenousaunee: An Evening of Indigenous Cuisine in October, featured Chef Lorinda John.

Premium hospitality on display as Patina shines at PGA events

From the PGA Championship in Louisville, Ky., to the KPMG Women’s PGA Championship in Sammamish, Wash., and the KitchenAid Senior PGA Championship in Benton Harbor, Mich., Patina Restaurant Group, the official catering partner of the PGA, was busy throughout 2024.  

Patina and the PGA also announced the extension of their partnership through 2034, which will include several Ryder Cup competitions.

During the May PGA Championship at Valhalla in Louisville – the largest PGA Championship in terms of attendance on record – Patina operated all aspects of the event’s foodservice, including seven on-course market concessions, nine bar outlets, chalets, suites, premium suites, Club PGA, Champions Club, Valhalla Member Club, PGA Member Club, Chase Sapphire Lounge, media, player and caddie dining, and the esteemed clubhouse at Valhalla Golf Club.

Patina Restaurant Group plays major role at inaugural LA Wine & Food Festival

Delaware North’s Patina Restaurant Group, which has an extensive hospitality footprint in Southern California, played an integral role at the inaugural Los Angeles Wine & Food Festival, held in March in Santa Monica.  

More than 2,800 people attended the all-inclusive food and drink event, which featured 16 “headliner” celebrity chefs and more than 65 local eateries, highlighting a spectrum of cuisine and flavors while celebrating the city of Los Angeles. 

Patina was a presenting sponsor of the event, in addition to providing all service and bar staff and assisting with dish preparation before and during the event. The festival also spotlighted female chefs and women-owned restaurants, including Megan Logan, executive chef of Nick + Stef’s Steakhouse LA, which is operated by Patina.

Patina debuts new concepts with Michelin-starred chef at Downtown Disney

In May, Patina Restaurant Group celebrated the grand opening of three new Mexican concepts – Paseo, Céntrico and Tiendita – in the Downtown Disney District at Disneyland Resort in California. World-renowned chef and restaurateur Carlos Gaytán joined Delaware North CEO Jerry Jacobs Jr., company leaders and Disney representatives to unveil these highly anticipated concepts.  

“We are honored to welcome Chef Carlos Gaytán to the Delaware North family,” Jacobs said. “The three new concepts continue a vision we have shared over the two decades of our partnership with Disney: to bring exciting and innovative concepts to Disney fans and foodies alike.” 

As the first Mexican-born chef to earn a coveted Michelin star, Gaytán is a widely recognized ambassador of Mexican cuisine and has been featured in numerous food, travel, lifestyle and broadcast outlets worldwide.

The menus across all three outlets feature modern versions of Gaytán’s childhood favorites, including the vibrant flavors of chiles, aromatic spices and homemade tortillas. Paseo transports guests to the heart of Gaytán’s hometown, creating an immersive experience through the food, beverage, ambiance and service.

Patina Restaurant Group shines at F1 Las Vegas Grand Prix

The F1 Las Vegas Grand Prix, held in November, marked a successful debut for Delaware North and Patina Restaurant Group’s first foray into motorsports hospitality.  

The highly anticipated event, where Patina oversaw four fan zones featuring an all-inclusive food experience, drew an estimated 300,000 fans, who were treated to an impressive array of culinary offerings, including a Farro Mediterranean Bowl, Mushroom Tinga Taco, Fried Chicken Sandwich, the innovative Baffle™ (a burger pressed in a waffle maker) and Apple Pie Taquito.

“By anticipating demand and leaning into our all-inclusive model, we kept lines moving smoothly and ensured outstanding service at every touchpoint,” said John “JK” Kolaski, president of Patina. “The logistics behind the event were extraordinary. The team prepped over 60,000 of the signature Baffles in Los Angeles, then finished them fresh onsite in Las Vegas.”

Patina Catering shines behind the scenes of Candlelight Concert at Segerstrom Center for the Arts

Patina Catering shone brightly at Segerstrom Center for the Arts’ 50th anniversary of its Candlelight Concert fundraiser in December, which included a 90-minute performance by Elton John. The Patina team collaborated with James Beard Award-winning chef Timothy Hollingsworth to create a three-course menu and cocktails that nodded to Elton John’s music. 

The goal was to “create a multisensory experience that intertwined music and cuisine,” said Stephanie Edens, vice president of events and catering for Patina. 

“Chef Hollingsworth and our team worked together to craft a menu that paid subtle homage to Elton John’s iconic repertoire, balancing playful creativity with sophisticated culinary execution. Each dish and cocktail reflected a sense of artistry that mirrored the performer’s legendary style,” she said.

The event raised an astounding $19.2 million to support nonprofit artistic, education and community initiatives.
